Breakfast on the go makes you feel good to eat!

Cookbook author Erin Clark has it covered well

As I got older, I had to accept a hard truth for myself: a drive-thru latte is not a proper breakfast.

Even though I’d like to be someone who only runs on coffee, it always sets me up for a bad day – and I feel like freezing a few hours before lunchtime.

Prepping some breakfast at home has become my alternative to those coffee shop breakfasts. Despite the advanced planning and prep work involved, once I have it packed and breakfast ready in the fridge, driving one of those takes less work than driving.

Of course, not every breakfast goes well. When I say grab and go – I want to be able to literally take it and walk out the door. These recipes are all worthy!
