Stir in the gyro meat (Photo 1) Place a rack in the upper third of your oven and preheat it to 400 degrees Fahrenheit. Line a large baking pan with parchment paper. In a bowl, combine the ground beef, lamb, garlic, oregano, cumin, cinnamon, salt and black pepper. Mix until the spices are evenly distributed, but do not overcook the meat.
Press it onto a sheet pan.. Transfer the mixture to the prepared sheet pan. Press your fingers and lift the layer to be thin and extend to the edge of the parchment. It is important to keep the thickness even so the meat cooks at the same rate.
Score the meat (Photo 2) With a bench press or a butter knife, score the meat down the middle lengthwise. Then tape it to the 1-inch straps in a crosswise direction. Lightly coat with olive oil. The point gives you a guide for cutting the meat and helps reduce some of the shrinkage during baking.
Bake. Bake on the upper third rack for 15 to 20 minutes, until the meat is cooked through and beginning to brown on top.
Drain and cut into pieces (Photo 3) As soon as the meat comes out of the oven, carefully pour off the excess liquid. To cut the meat again, run the bench press or knife along the first score marks.
Serve.. Heat the pitas and add the meat slices and toppings of your choice. enjoy it!
