This high-protein Korean beef bowl combines sweet and salty brown ground beef with a nice Asian cucumber salad, creamy gochujang sauce, jasmine rice, and your favorite toppings for an equally satisfying and delicious dinner!

Food dishes (as well taco salad bowl!) are popular in my house because my husband and I love that they are Easy healthy dinnerAnd the kids love to customize their own bowls. And these high protein Korean beef bowls are a big hit with everyone! The beef cooks quickly and has so much flavor, then a creamy gochujang sauce pulls everything together. (And surprisingly, the soup is packed with protein with cottage cheese!) It’s a perfectly balanced meal in a bowl with courgette salad, rice, and carrots.
Why is this Korean Ground Beef Bowl determined to be the new favorite?
After trying a few times to tweak this recipe, I was not disappointed. I think I could eat these 7 days a week and never get tired! What makes this recipe so special is the following.
- Full of protein. Ground beef and cottage cheese make this a protein-packed dinner. Add a fried egg on top if you want more!
- Great taste. With spices, sweet honey, nutty sesame oil, ginger, garlic and spicy gochujang, this bowl is not lacking in the flavor department.
- Excellent texture. I think the best food bowls have a mix of textures and this one delivers with meaty meat, soft rice, creamy sauce and good vegetables.
- Food that can be prepared. Which is my favorite kind of recipe! Prepare the ingredients ahead of time and then assemble them when you’re ready to eat.

What you need
There are a few parts to these bowls, but each one is easy to make. Scroll down to the recipe card for exact measurements.
- Beef – I use 97/3 ground beef to lean the plates.
- Ginger and garlic – Use hot for both! They have more flavor than the dry versions.
- Tamari – I like tamarind because it’s gluten-free, but soy sauce is great.
- Mar – A slight sweetness offsets the salty tamarind and spicy red pepper flakes.
- Sesame oil – Use toasted sesame oil for a nutty flavor.
- Red pepper flakes – Feel free to adjust the size to your preference!
- Green onion – You can add some to ground beef and keep it as a garnish.

- Creamy gochujang sauce – Made with cottage cheese, gochujang and water.

- Roasted carrots – Clear texture and color.
- Optional addition – Try chopped green onions, sesame seeds or fried eggs for extra protein.
How to make high protein Korean beef dishes
If you want to make these bowls even faster, use a microwaveable rice bag!


- Prepare the pumpkin salad. Mix together the cucumbers, red onion, red bell pepper, rice wine vinegar, honey, sesame seeds, sesame oil, red pepper and salt. Set aside while you prepare the rest of the bowl.
- Make the gochujang soup. Add the cottage cheese, gochujang and water to a blender. Blend until completely smooth and creamy.
- Brown the meat. Heat a large pan over medium-high heat. Add the ground beef and break it up with a wooden spoon or meat grinder as it cooks.
- Add spices. When the beef is partially cooked, add garlic and ginger. Continue cooking for another 2 or 3 minutes.


- Avoid the bull season. Mix tamarind, honey, sesame oil, red pepper flakes and green onions. Prepare for another minute.
- Collect. Add jasmine rice to each bowl, then add ground beef, cucumber salad and shredded carrots. Drizzle with creamy gochujang sauce and add your favorite toppings.
Tips for the best Korean beef dishes
These bowls are easy, but I have a few extra tips to help make them perfect.
- Use lean beef. This means you will end up with less grease in the cooker.
- Adjust the gochujang to taste. You can always add more, but you can never add less! So if you’re not sure, start conservatively, then taste and add more if needed.
- Make the sauce really smooth. Give the cottage cheese mixture enough time in the mixture to fully cream so there is no curd left.

Variable thoughts
There are many ways to make these plates your own! Here’s some inspiration to get you started.
- Change the rice. Try brown rice or cauliflower rice instead of jasmine rice.
- Add more vegetables. Edamame, kimchi, or seasonal vegetables will work.
- Change the protein. Try ground turkey instead of ground beef. Since the turkey is light, add oil to the pan first.
Storage and reheating
- Refrigerator: Store the cooked Korean meat and rice in airtight containers in the refrigerator. Place the pumpkin salad and gochujang sauce in separate bowls. They will keep in the refrigerator for 3 days.

- Add the cottage cheese, gochujang and water to the blender. Blend until smooth and creamy. Set aside.
- Heat a large skillet over medium-high heat. Add minced meat – make sure to break it up with a meat spoon or meat grinder. Cook until half done – it will look a little pink.
- Add the garlic and ginger to the meat mixture, stir to combine and cook for an additional 2-3 minutes until the meat is browned.
- It’s time to make the soup – add tamari, honey, sesame oil, red pepper and green onion to the meat mixture. Stir everything together! Cook for 1 minute and remove from heat.
- Assemble bowls: Add 1/2 cup rice, 6 oz. Add ground beef, 1 cup Asian cucumber, 1/2 cup roasted carrots, and 1-2 tablespoons of creamy gochujang sauce.
