What you need
Here’s an overview of the ingredients you’ll need to make this Cinnamon Apple Baked Oatmeal. Scroll down to the recipe card for exact measurements.
- oats – I love old-fashioned oats for this recipe; They are softer than steel-cut oats, but have a rougher texture than quick oats.
- Vanilla protein powder – Since there are no eggs in this recipe, you can make vegan baked oatmeal by opting for this plant-based protein powder.
- Spices – Cinnamon is the star, but ground nutmeg adds some background heat.
- Baking powder – Helps to create a smooth texture.
- Salt – To balance the sweetness and improve the overall taste.
- Oat milk – Any milk will work, but I like oat milk cream.
- Unpacked apples – This helps bind everything together and adds more apple flavor.
- Maple syrup – Honey or date syrup of your choice will work too.
- Vanilla extract – Vanilla bean paste is another option.
- Apple – I recommend firm, sweet-tart apples like Honeycrisp or Pink Lady.
- Walnuts – Pecans are delicious too, or leave them in your baked goods if you’re not a fan of nuts.
How to make Cinnamon Baked Apple Oatmeal
This convenient breakfast comes together in just a few easy steps.

- Mix the dry ingredients. Add oats, protein powder, cinnamon, baking powder, nutmeg, and salt to an 8×8-inch baking dish. Whisk to combine.
- Add wet ingredients. Pour in the oat milk, apple, maple syrup and vanilla extract. Stir until everything is well mixed.

- Add straps. Scatter the sliced apples and chopped walnuts evenly over the top.
- Bake. Bake at 350ºF for 30 to 40 minutes or until oatmeal is set and lightly golden around the edges.
- Serve chilled. Let the baked oatmeal cool for a few minutes before cutting and serving.
Tips for the best cooked oatmeal
Whether you’re making this recipe or another, here are some tips to help you turn it out perfect.
- Cut the apples into small pieces. Small bits of fruit make baked oatmeal more cohesive and easier to serve.
- Find out when it’s done. The center must be prepared; It should come back out when you gently nudge it. The edges of the baked oatmeal will be slightly browned and slightly away from the sides of the pan.
- Let it cool a little. Oatmeal continues to stand up when it cools, so it holds its shape better.
- up. Most baked oatmeal recipes (including this one) are lightly sweetened. You can add maple syrup, warm almond butter or a dollop of vanilla Greek yogurt before serving.

Variable thoughts
Here’s some inspiration if you want to play around with this recipe to make it your own.
- Add raisins or dried cranberries. You can replace them with whole or part of walnuts. If you like your raisins plump and soft, try soaking them in warm apple cider for 30 minutes before making the recipe!
- Give it a nut-free crunch. Pepitas add some crunchy goodness without the fruit.
- Change the spices. Substitute cinnamon and nutmeg for apple pie spice.
Storage and reheating
- Refrigerator: Store leftover baked apple oatmeal in an airtight container for up to 5 days.
- Refrigerator: Cut into individual portions and freeze for up to 3 months. I like to wrap it in plastic wrap, then store the pieces in an airtight container.
- to reheat; Heat in the microwave for 30 to 60 seconds or until heated through at 350 degrees Fahrenheit.
