This ice cream tastes like the height of summer. If you can get hold of the juiciest blueberries of the season, this is the recipe to use them up. (Frozen blueberries would also work well.)   1. Blueberry – Fresh blueberries in peak season really shine in this recipe. They cook into a lively compote that adds bursts of sweet-and-sour flavor to the ice cream. Frozen blueberries will work too if that’s what you have.
  2. Heavy cream and whole milk – I like the 2:1 ratio. This combination creates a rich, creamy texture that glides on beautifully.
  3. Egg yolks – The egg yolks make this base creamy, it gives the ice cream a really silky texture.
  4. Lemon flavor and lemon juice – A bit of citrus brightens both the custard and the blueberry compote, adding berry flavor and cutting through its richness.
  5. Brown Sugar Cinnamon Crumble – A simple mix of flour, brown sugar, cinnamon, and butter is our cobbler topping that provides a delicious texture throughout the ice cream.

The first round I tested had almost double the egg yolk. While I loved the texture and decadence, I found it a bit too rich for ice cream. I wanted something a little lighter for a hot summer day that I could eat by the spoonful without feeling heavy. So reducing the amount of egg yolk made this recipe more cost effective and texturally appealing.

Quick Tips for the Best Blueberry Cobbler Ice Cream

Chill your ice cream bowl well. Leave it in the refrigerator for at least 16 hours so that the custard cools quickly and spoils properly.

Don’t rush the cooling step. Cream and blueberry compote should be completely cold before assembling the ice cream.

Bake the crumble until golden brown. Over-baking will make it too hard after it cools, so look for light golden edges instead of deep brown.

Layer instead of mixing everything together. The layering creates beautiful swirls of blueberry while maintaining defined pockets of butter.

Leave the ice cream before softening. Five minutes on the counter makes serving much easier and gives the best creamy texture.

Make-Ahead & Storage

Make forward. The cream can be made up to 2 days ago and stored in the refrigerator. Blueberry compote and cobbler can also be prepared 1-2 days agofast dials the day of failure.

Storage. Store the finished ice cream in an airtight freezer container or quart deli container lined with parchment or plastic wrap. Freeze until 2 weeks for the freshest taste and texture.

To make vanilla ice cream:

  • In a small saucepan, add sugar and lemon zest. Use your fingers to rub the lemon peel into the sugar to release the oils. Then mix in the heavy cream, milk, vanilla extract and salt. Place the pot over medium-low heat and cook the mixture until the sugar dissolves, about 7 minutes. Take the pot off the heat.

  • In a bowl, beat the egg yolks until combined. Then, while whisking, slowly pour in about a third of the hot cream mixture. This is to soften the eggs so they don’t fall into the custard base. Now pour the egg yolk mixture back into the saucepan and whisk everything to combine.

  • Place the pot over medium-low heat, stirring occasionally, until the mixture thickens and reaches about 165 degrees F. The cream should just coat the back of the spoon.

  • Strain the custard into a heatproof container and let cool on the counter for about 15 minutes. Then cover the surface with plastic wrap to avoid skin formation. Then refrigerate until completely chilled, about 4 hours and up to overnight. This custard must be very cold to set properly.

To make blueberry compote:

  • In a small bowl, mix the cornstarch with 1 tablespoon of lemon juice and set aside.

  • In a small saucepan over medium-low heat, add blueberries, granulated sugar, and 1 tablespoon lemon juice. Stir to combine and blend the berries to release their juices. Let the berries cook for 4-6 minutes.

  • Stir in cornstarch powder and cook until mixture begins to bubble and thicken, about 2 minutes. Remove from heat.

  • Allow the mixture to cool to room temperature, then refrigerate for at least an hour to chill completely.

To make the shoe top:

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper. In a small bowl, mix the brown sugar, flour, cinnamon and salt with a fork or small whisk. Once combined, add the butter and mix until crumbly. Spread the crumble evenly on the prepared baking sheet and bake for 10 minutes until golden. Set the crumble aside to cool.

  • Note: We don’t want to overdo it because the crumbles will be too firm when mixed into the ice cream and cooled.

To make ice cream:

  • Start by lining a loaf pan with parchment paper. You want the parchment to cover the bottom of the loaf pan and hang over the sides to create a “sling”. Or you can use a quart deli to hold the ice cream.

  • Attach your ice cream bowl and paddle to the mixer. Then turn the mixer to the lowest speed and slowly pour in the cream. You want to add the cream while the mixer is running so it starts to whip and doesn’t freeze to the sides of the bowl.

  • After about 25 minutes, it should look like soft serve; remove and add one-third of the ice cream to the prepared pan or dish. Then pour the blueberry compote on the layer and spread the crumble on top. Using a knife or skewer, swirl the compote a little into the ice cream layer. Repeat with remaining ice cream.

  • Freeze for at least 4 hours before serving by the generous spoonful in waffle cones or coupes.
