This Pickled cucumber It’s creamy, savory, loaded with fresh herbs, and comes together in just 20 minutes. This is the perfect quick and easy appetizer for summer parties, pool days, or hanging out on the patio. My ideal summer spread would be this spread, my grinder sandwich and a pitcher watermelon pearls.


Summer has been whispering in our ears here in Los Angeles, which means I’ve officially entered snacking season. I’m talking big paws (like mine! caramelized jelly), salty chips, cold drinks and easy recipes that don’t require turning on the oven. If you are a lover of delicious snacks like me, then this pickle belongs on your table. Imagine this patty piled high on a silver platter with kettle-cooked donuts next to it, and maybe Aperol spritz in hand? I mean, it sounds like the ultimate summer behavior to me, and I’m ready to make it my reality.


Ingredients you need for pickles


- Dill pickles – The star of the show. I like to use Grillo’s pickles because they are extra crunchy and perfectly salty.
- Greek yogurt and mayonnaise – This combination creates a creamy foundation that is rich without being too heavy.
- Jalapeño and pepperoncini – These add brightness and a gentle kick of warmth.
- Fresh herbs – Dill, parsley, green onions and chives make every bite taste fresh and vibrant.
- Colby Jack cheese – Adds richness and texture while helping to thicken the absorbency to achieve the curling texture I love.

Quick Tips for the Best Pickle Dip
Finely chop everything. Small pieces create better texture and ensure you get a little bit of everything in every bite.
Allow to cool before serving. Even 30 minutes in the fridge helps the flavors meld.
Adjust the heat level. Leave the jalapeño seeds on for more spice or remove them for a milder dip.
Use solid chips. Kettle-cooked or crinkle-cut potato chips are best served in a thick, creamy dip. Plus, I just love the extra crunch.

Make forward. Make it up to 24 hours in advance, cover tightly and refrigerate until ready to serve.
Storage. Store leftovers in a Grillo’s Pickles container or in an airtight container in the refrigerator for up to 4 days. Give it a quick stir before serving, it is quite normal for some liquid to separate during storage.

This recipe is very easy. Take a medium sized bowl and mix everything except the cheese.
