Back to school will be different when you have a plan.
One of my kids goes back on the 19th and if you’re in the same boat right now, you know exactly how I feel this week – the scramble to get back to work, the mental burden of knowing what everyone is eating and the real desire to keep things healthy without making dinner a whole lot.
That’s exactly what this week’s plan is made for. Real food, high protein and nutrients that fit into a busy week without asking too much.
This week’s lineup
Greek Chicken Bowls – A bowl that makes fresh, colorful and healthy eating feel like a treat. Seasoned chicken, all the good stuff, and an ageless flavor profile. It is good to prepare food in advance and eat it throughout the week.
Steak stir fry – Fast, bold and on the table in less than 30 minutes. This is a weeknight dinner, when the week gets away from you – which will be when it’s back to school.
Beef Enchiladas – Comfort food for the whole family. The kind of dinner that’s rich, hearty and everyone’s happy without spending your entire evening in the kitchen.
Healthy Zucchini Muffins — Really moist, good, and a snack your kids will eat. Batch baking these Sunday and school morning snacks will take you through the week without a second.
Peanut butter overnight oats – Prepare it the night before and breakfast is ready before the alarm goes off. The cream, the filling and that peanut butter make it feel good enough for anyone to complain. Back to school mornings just got easier.
Routine is everything this year – and planning ahead is how you can expect it. This week is set for good.
