Of all the potato salad options, this might be my favorite. Even this style of potato salad has variations in the Caribbean and South America. I love the sweet, tender beets and carrots with the hearty bite of the potatoes, all slathered together, but with a bright sauce. And that deep pink color is just so pretty. Ingredients You’ll Need for Haitian Potato Salad


- Russet potatoes – For the base of the salad, I prefer rust over larger Yukon Gold or Red potatoes, but any of these options will work.
- Beet – For a bright pink color and subtle earthy sweetness.
- Carrot – Another root vegetable that adds color and subtle sweetness.
- Mayonnaise – Creates a creamy dressing that ties everything together. For the best texture, use your favorite full fat mayonnaise, I like Hellman’s or Best Foods.
- Boiled egg – They are in potato salad, I don’t set rules.
- Red wine vinegar – This cuts through the mayo and lightens the richness of the salad.

Quick Tips for the Best Haitian Potato Salad
Cook vegetables whole, not sliced. This helps prevent them from dehydrating during boiling.
Be careful not to overcook the potatoes and beets. Slightly firmer vegetables hold their shape better after being mixed.
If possible, prepare the salad a few hours in advance. I find the flavor gets better as it sits.


Preparation, storage and heating
Make forward. Vegetables and eggs can be cooked up to 2 days in advance and stored separately in the refrigerator. The finished salad can be assembled a day before. It gets better as it sits so I highly recommend it.
Storage. Store leftovers in an airtight container in the refrigerator for up to 3 days.

Boil potatoes, beets and carrots until soft. After 20 minutes, we take out the carrot and put it aside to cool. Potatoes and beets should cook for another 15 minutes or so. You don’t want mashed root vegetables, we’re looking for al dente.

While the potatoes, beets, and carrots are cooling, cook your eggs until hard-boiled, about 10 minutes. Once touched, remove the skins from the potatoes, beets and carrots. Remove the shell from the eggs.

Cut the potatoes, beets, and carrots into half-inch pieces. Coarsely chop the egg. Add everything to a large bowl. Now add the mayonnaise, Dijon mustard, garlic powder, onion powder, adobo, red wine vinegar, salt, pepper and parsley. Toss until everything is well combined and the salad is bright pink. Garnish with more chopped parsley.

Cover and refrigerate for an hour to allow the flavors to meld and serve cold.
