Two ingredients I knew this recipe needed: deep peach flavor and a cinnamon crunch. If you have seen my strawberry brownies or my lemon browniesyou’ll notice that my signature glaze contains white chocolate, and OMG, white chocolate works so well with peaches. And the secret ingredient to keeping this dessert balanced and not too decadent is lemon. The acid is what brings it all together and enhances the peach flavor. You must try this recipe.

White Chocolate Peach Glaze.

To make peach brownies:

  • Preheat oven to 350℉. Grease and line an 8×8-inch pan and place a piece of parchment paper running down the center lengthwise, with the ends of the parchment hanging over the edge of the pan. Press the parchment flat to adhere it to the bottom and sides of the pan.

  • In a small processor or blender, add the frozen peaches. Pulse until peaches are powdery. Scoop out 2 teaspoons, store in an airtight container (we’ll use this for the frosting later and don’t want it to curdle). Then add the sugar to the remaining peach powder and beat briefly until combined.

  • Add the peach sugar to a bowl, along with the butter and vanilla extract. Beat the butter and sugar with a hand mixer on medium speed until fluffy, about 1 minute.

  • Then add lemon juice and eggs. Beat together on medium speed until combined and smooth.

  • Now add your dry ingredients: flour, baking powder, salt. Beat on low speed until just combined. Then gently pour in ¾ of the fresh peaches.

  • Pour the batter into the prepared baking dish. Then sprinkle the remaining peaches on top. Bake the peach brownies for about 35 minutes, until golden brown and cracked on top. Let cool for at least 30 minutes before removing from the baking pan and adding the glaze. The center may puff up, but it will settle as it cools.
